Bravas – Entrepreneurship Spotlight

From a food cart to a food truck to a brick and mortar location serving up hot dogs, burgers and more, Bo Gonzalez and Bravas has experienced impressive growth in the Fort Wayne community since 2011. We caught up with one of the city’s most successful young restaurateurs in today’s entrepreneurship spotlight. What made you decide to open a business in Fort Wayne? I think being born and raised here has a lot to do with it. When I started Bravas back in 2011 there was a lack of local food trucks/restaurants ran by local entrepreneurs so that was also a big part of the motivation to open in Fort Wayne – tons of opportunity. What resource in the community has helped you thrive in the community? I would have to say the other small business owners in the city. There’s a great community of local entrepreneurs that have been super helpful. Getting to talk to another person about real life business challenges/successes has been huge for my own success. What is the biggest challenge you have worked to overcome in starting your business? Growth. We have grown pretty quickly over the last five-six years and that brings about so many challenges like staffing, sourcing more ingredients, investing company capital, training, etc. What person has helped you the most in your journey? This is hard because so many people have helped myself and Bravas get to where we are. If I have to pick it’s gotta be Mom and Dad. They were on board from the beginning and have continued to support us in so many ways. My mom even named the company. What is some advice you would have for new entrepreneurs? Do work that makes you feel good everyday. You’re going to work insane hours so love what you do. Take breaks when needed and take care of yourself mentally and physically. Great work demands a lot. What would be the best thing Fort Wayne could do for entrepreneurs in your opinion? This is hard because I feel Fort Wayne is actually pretty great for entrepreneurs. Maybe some sort of incentive for local options as opposed to chain, out of state options. For example if a grocery store wanted to open downtown, open it up to a local entrepreneur first before getting bids from larger chains.   For more information on Bravas, go to their website. Tacos Bravas – Tacos are Coming

You guys. Never since the advent of the taco emoji has there been such exciting news in the world of tacos. Bravas, the culinary geniuses who have brought us specialty hot dogs and gourmet burgers are bringing a Taco Bus to the city of Fort Wayne. Behold Tacos Bravas, the newest creation of the Bravas food empire.   I sat down with owner Bo Gonzalez at Bravas specialty burger joint to get the skinny on the newest addition to the Bravas family. Bravas food journey started in May 2011 with a food cart that sold the most delicious hot dog creations that you can imagine. (My fave is El Gringo. Just order it and thank me later.)  Bravas had quite the following and in September 2012 a food truck joined its fleet and roamed the streets of Fort Wayne delivering specialty hotdogs and the most amazing patatas you can imagine. The special garlic aioli sauce may be slightly addicting… don’t say I didn’t warn you. On the heels of the success of burger nights on the food truck, Bravas opened its very own store front in December 2014 where they butcher, cure, and grind their burger meat in-house to serve up the most amazing burger creations I have had the pleasure of devouring. (My fave is the PB Burger. Homemade peanut butter, bacon, pickled peppers, and mayo. You’re welcome.)   With all the success that Bo has experienced with the storefront I asked him why tacos? And why a taco bus? Believe it or not, Bravas was always supposed to be a specialty taco concept. Bo is of Spanish descent and grew up frequenting taquerias. When he did the research to see how much a taco cart with the initial equipment would be, it was too much for the then 19-year-old to handle. But now with the last five successful years under his belt, he is ready to go back to his original Bravas concept and create specialty tacos to be washed down with horchata and fresh lemonade self-served off of the bus.   So wait…why a bus? You can thank a late night scrolling Craig’s List for that. Bo came across an old Head Start bus for sale on a Sunday and by that Wednesday he pulled the trigger and bought it creating Fort Wayne’s first Tacos Bravas taco bus, which is projected to officially open this coming fall.
